DIY Guacamole :)

So. This summer I am home nannying, helping my sister with wedding planning, and helping my mom around the house! Super laid back and enjoyable; however, I can't ignore that I feel like a mom-in-training. Most of my days I am taking care of three (precious) kids, and then helping cook dinner and do laundry. Goodbye twenties, hello late thirties. HOWEVER, during this time, I've found that two things are very "in" right now: The "DIY" (do it yourself) mentality, and also avocados. I've always been a big fan of chips and salsa and queso...you're crazy if you're not! The other day I was at my sister-in-law's and she made the best guacamole. I've never been a big avocado fan, but now I want them on everything.... I'm going to share the process and recipe with you all! So easy to make and absolutely delish! Enjoy :)

What you'll need:
1/2 a tomato (finely diced)
2 small-ish avocados
1 red, sweet onion (also finely diced)
[Note: only use 2 Tablespoons of the onion once diced]
1/2 teaspoon of salt
1/2 teaspoon of red cayann pepper
1 Tablespoon of cilantro
1.5 - 2 Tablespoons of Lime Juice (recipe calls for "non-artificial", I'm too lazy for that....)
A dash of hot sauce!

>> I only used half the tomato and 2 Tablespoons of the onion. You can use as much or as little of them as you like...I just didn't want that to overpower the avocado! But make the recipe your own, of course :)

Step 1:

Cut up and dice the tomato and onion. Be prepared to cry... a lot. Those onions are deadly. Cut the two avocados and then (here is the REALLY fun part!) mash them up! I've never done this before, so I thought it was kind of a stress-reliever...

Step Two:

Ignore the fact that the mashed up avocado looks seemingly identical to baby-food....










                                                                   Step Three:

Mix all the ingredients! Seriously, it is that simple.
  























Serve with your favorite tortilla or pita chip;
I personally opt for the blue corn chips! 








Serve it with some pineapple for the perfect summertime snack! Also, light a candle to get that onion stench out of the air...... P.S. You can just stick the leftovers in the fridge! No need to cover with saran wrap.
